How to combine items of different lengths into one array?

I’m trying to put together this array of DatePicker items into one JSON array that looks like this:

I thought using spread syntax might work, but I’m getting the following error:

I’m guessing I don’t know how to reference the individual DatePicker items in the array, but I’m not sure how to go about this.
